March: that was when the last shipment of ingredients arrived from Chef Luca Varuni’s hometown of San Marzano, to his restaurant, Varuni Napoli. Proper ingredients are essential for crafting a delicious Margherita pizza, since it relies on only a few basics, including tomatoes, mozzarella, and extra virgin olive oil. This is why Varuni travels home every year to handpick them – so he can ensure all his guests leave one of his two Atlanta locations feeling as if they had tasted a pizza straight from the pie’s origins in Naples.
